Oriental Cucumber Salad

2 med. size cucumbers, peeled and seeded
2 tsp. salt
1/2 C. white vinegar
1 Tbs. sugar
1 Tbs. water
1 1/2 tsp. soy sauce
1/2 tsp. ground ginger
Directions:Cut cucumbers into thin slices. Place in bowl and sprinkle with salt. Let stand at room temperature for 1-2 hours. Drain and squeeze out excess liquid. Combine vinegar, sugar, water, soy sauce and ginger in serving bowl. Add cucumbers and mix well. Chill thoroughly before serving.
