Spam Potato Salad

This doesn't sound appetizing...but it's wonderful and I've never met anyone who doesn't like spam potato salad.
5-6 medium potatoes (skins on)
1/2-3/4 cup mayonnaise (I prefer Dukes)
1/2 cup frozen peas-cooked & drained or 1/2 cup canned peas drained
1 can spam luncheon meat-diced in 1/4 inch (or bite size) squares
salt & pepper to taste
Scrub skins of potatoes to wash off any dirt. Cut potatoes into 1/4 or bite size squares (skins on). Boil potatoes until fork tender. Be sure not to over cook. Drain and rinse potatoes in cool water. Once potatoes are cool, add remaining ingredients. If it's too dry you can add more mayonnaise until it's the consistency you want. It's best when served right away. You may refrigerate and serve later but I prefer it right after it's made.
