Hawaiian Cake

The frosting/filling is what really makes this cake yummy!

1 large Cool Whip
1 cup coconut
2 pkgs. of instant vanilla pudding mix
1 large can crushed pineapple, well drained
(Use the juice for the cake mix!)

Mix all together and let cool for several hours.

Bake one Duncan Heinz yellow cake (to which a small can of drained mandarin oranges has been added)

Bake according to the directions in two 8 inch pans.

Frost layers of cake with the cooled filling mixture and enjoy!

This filling is also excellent as a fruit dip with sliced apples, strawberries, and assortment of fruits ! Yummy !!!!!

Why do you have to let the first mixture cool when it was made with instant pudding mix??? It was never cooked.

This cake is a favorite at our house. If you love pina coladas, this is the cake for you! Try it and you'll be hooked! You can also break up the cake, then put a layer into a trifle bowl, and then spread the filling between the 'layers' of cake. (You can also add chopped marachino cherries to the filling mixture also, for more added color.)
